Born from the verdant lands of Chablis, Domaine Passy le Clou, originally Domaine Patrice, stands as a testament to viticultural mastery and innovation. Founded in the 1950s by the Patrice family, the estate initially focused on cereal cultivation. However, recognizing the potential of their land, the family ventured into viticulture, reshaping their fields into flourishing vineyards. Over three decades, they honed their craft in the Petit Chablis, Chablis, and Chablis 1er Cru Beauroy appellations, initially partnering with a cooperative cellar.
In the early 2000s, a pivotal change occurred. The family erected a wine cellar in Beine, marking the beginning of an era where they could infuse their unique expertise directly into their wines. Initially selling in bulk to partner merchants, the estate's reputation for quality grew steadily.
2017 marked a new chapter with the Descombe family's stewardship. They inaugurated Domaine Passy le Clou, focusing on bottled wine production. This transition was supported by significant investments in the cellar, enhancing the winemaking capacity with the addition of small vats. This upgrade enabled the vinification of the entire estate in plots, starting from the 2018 vintage.
Spread across 21 distinctive plots throughout Chablis, Domaine Passy le Clou's vineyards are a mosaic of unique terroirs, each contributing to the complexity and character of their wines.
